  • Freshly ground black pepper, to taste

Optional Burger Assembly:

  • 4 brioche buns, toasted
  • 4 slices sharp cheddar or truffle cheese
  • Butter lettuce leaves
  • Heirloom tomato slices
  • Red onion rings
  • Homemade aioli or Kewpie mayo
  • Dill pickles

Optional Flavor Boosters:

  • 1 tbsp unsalted butter (for basting)
  • 1 tsp mushroom powder or umami seasoning
  • Dash of soy sauce (for aioli)

Instructions

  • Prepare Patties: Let beef rest 10–15 mins. Divide into 4 portions, shape gently into ¾-inch patties. Press a shallow center dimple.
  • Heat Cooking Surface: Heat cast iron skillet or grill to high heat (450–500°F).
  • Season Patties: Season each side with salt and pepper just before cooking. Add umami seasoning if using.
  • Cook Patties: Sear patties 3 mins per side for medium-rare. Don’t press down. Optional: Baste with butter last minute.
  • Add Cheese: Add cheese after flipping. Cover for 30–60 secs to melt.
  • Toast Buns: Toast buns on skillet/grill after patties are done, about 30 secs.
  • Assemble Burger: Bottom bun → aioli → lettuce → tomato → patty → onion → pickles → top bun. Add optional soy glaze, microgreens.
  • Rest & Serve: Let burgers rest 2–3 mins. Serve with fries or a crisp salad.
