- Butter lettuce leaves
- Heirloom tomato slices
- Red onion rings
- Homemade aioli or Kewpie mayo
- Dill pickles

- 1 tbsp unsalted butter (for basting)
- 1 tsp mushroom powder or umami seasoning
- Dash of soy sauce (for aioli)
Instructions
- Prepare Patties: Let beef rest 10–15 mins. Divide into 4 portions, shape gently into ¾-inch patties. Press a shallow center dimple.
- Heat Cooking Surface: Heat cast iron skillet or grill to high heat (450–500°F).
- Season Patties: Season each side with salt and pepper just before cooking. Add umami seasoning if using.
- Cook Patties: Sear patties 3 mins per side for medium-rare. Don’t press down. Optional: Baste with butter last minute.
- Add Cheese: Add cheese after flipping. Cover for 30–60 secs to melt.
- Toast Buns: Toast buns on skillet/grill after patties are done, about 30 secs.
- Assemble Burger: Bottom bun → aioli → lettuce → tomato → patty → onion → pickles → top bun. Add optional soy glaze, microgreens.
- Rest & Serve: Let burgers rest 2–3 mins. Serve with fries or a crisp salad.
