Description

A rich, creamy Creole shrimp dish inspired by New Orleans’ St. Charles Avenue, perfect for dinner parties or family meals.

Core Ingredients:

  • pounds large Gulf shrimp, peeled and deveined

  • 3 tablespoons unsalted butter

  • 3 cloves garlic, finely minced

  • 1 medium shallot, finely chopped

  • ½ cup dry white wine (Sauvignon Blanc or Pinot Grigio)

  • 1 teaspoon Creole seasoning (or to taste)

  • Kosher salt and cracked black pepper, to taste

  • ½ lemon, juiced

Creamy Creole Sauce:

  • 3 tablespoons unsalted butter

  • 1 cup heavy cream

  • 2 teaspoons Dijon mustard

  • ½ teaspoon Worcestershire sauce

  • ⅛ teaspoon cayenne pepper (optional)

  • ¼ cup grated Parmesan (optional)

Optional Add-ins:

  • ½ cup cooked crawfish tails

  • ¼ cup sliced mushrooms, sautéed

  • 1 tablespoon dry sherry

Suggested Garnishes & Pairings:

  • Chopped parsley or green onions

  • Serve over creamy grits, buttered pasta, or toasted French bread


Instructions

  • Prep Shrimp: Pat shrimp dry. Season with salt, pepper, and Creole seasoning.
  • Sear Shrimp: In a skillet, melt 1 tbsp butter over medium-high. Sear shrimp 1½–2 minutes per side. Remove and set aside.
  • Sauté Aromatics: Lower heat. Add 1 tbsp butter, shallots, sauté 1 min. Add garlic, cook 30 sec. Deglaze with wine, simmer until reduced by half.
  • Make Sauce: Stir in remaining butter, cream, mustard, Worcestershire, cayenne, salt, and pepper. Simmer 3–5 min. Stir in Parmesan and sherry if using.
  • Combine: Return shrimp and juices to pan. Simmer 1–2 min. Add crawfish or mushrooms if using.
  • Serve: Spoon over grits, pasta, or bread. Garnish and serve immediately.

Notes

  • Sub wine with seafood stock + lemon juice.
  • Dairy-free? Use coconut or oat cream.
  • Leftovers keep 3 days refrigerated.
