Description

A minty, no-bake dessert lasagna inspired by the Shamrock Shake—perfect for St. Patrick’s Day or any festive occasion.

Ingredients

Scale

For the Crust:

  • 36 chocolate sandwich cookies (like Oreos), finely crushed
  • 6 tablespoons unsalted butter, melted

Mint Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring (gel or liquid)
  • 1 1/2 cups whipped topping (e.g., Cool Whip)

Mint Pudding Layer:

  • 2 (3.4 oz) packages instant vanilla pudding mix
  • 3 cups cold milk
  • 1 teaspoon peppermint extract
  • Optional: green food coloring
  • 1 1/2 cups whipped topping

Topping:

  • 2 cups whipped topping
  • Green sprinkles or sanding sugar
  • Mini chocolate chips or chopped Andes mints (optional)
  • Maraschino cherries (optional)

Instructions

  • Prepare the Crust: Mix crushed cookies with melted butter until combined. Press into a 9×13-inch dish. Chill while preparing the next layer.
  • Mint Cream Cheese Layer: Beat cream cheese until smooth. Add sugar, milk, peppermint extract, and food coloring. Fold in whipped topping. Spread over crust.
  • Mint Pudding Layer: Whisk pudding mix, milk, and peppermint extract until thick. Add food coloring if desired. Fold in whipped topping. Spread over cream cheese layer.
  • Top the Dessert: Spread remaining whipped topping over pudding. Garnish with sprinkles, chocolate chips, or cherries.
  • Chill: Refrigerate for at least 4 hours, preferably overnight. Slice with a warm knife and serve.

  1. Use peppermint extract for authentic flavor.
  2. Natural green coloring alternatives: matcha or spinach extract.
  3. Can be made dairy-free or gluten-free with suitable substitutes.
  4. Stores well refrigerated for 5 days or frozen for 1 month.
