Description

Warm, bold, and packed with flavor, this Santa Fe soup recipe combines ground beef, beans, and Southwestern spices into a cozy one-pot meal.


Ingredients

Proteins:

  • 1 lb ground beef (or ground turkey)

Canned Goods:

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) pinto beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 can (10 oz) Rotel tomatoes with green chilies (do not drain)

Seasonings:

  • 1 packet taco seasoning

  • 1 packet ranch dressing seasoning mix

Liquids:

  • 3 cups beef broth (or chicken broth)

Optional Toppings:

  • Shredded cheddar cheese

  • Sour cream

  • Fresh cilantro, chopped

  • Avocado slices

  • Tortilla chips or Fritos


Instructions

  • Brown Meat: In a large pot, cook ground beef over medium heat until no longer pink. Drain if needed.

  • Add Seasonings: Stir in taco and ranch seasoning. Cook 1–2 minutes to toast spices.

  • Add Canned Ingredients: Mix in beans, corn, and Rotel (with juices).

  • Add Broth: Pour in broth and bring to a gentle boil. Reduce heat, cover, and simmer 20–25 minutes.

  • Taste & Adjust: Add salt, pepper, or lime juice as needed.

 

  • Serve: Ladle into bowls. Garnish with cheese, sour cream, avocado, cilantro, and chips.

Notes

  • Substitute with ground turkey or omit meat for a vegetarian version.
  • For spicier soup, add diced jalapeño or hot Rotel.
  • Letting soup rest overnight deepens flavors even more.
