Description

Light, fluffy, and all-natural marshmallows without corn syrup—perfect for hot cocoa, s’mores, or snacking!

Core Ingredients:

  • 3 envelopes unflavored gelatin (about 7.5 tsp)

  • 1 cup cold water, divided

  • 2 cups granulated sugar (preferably organic cane sugar)

  • 1/4 tsp salt

  • 1 tbsp pure vanilla extract

  • 1/2 cup powdered sugar, for dusting

  • 1/4 cup cornstarch, for dusting (optional)

Optional Flavor Enhancements:

  • 1 tsp peppermint extract

  • 1/2 tsp almond extract

  • Natural gel-based food coloring


Instructions

  • Bloom the Gelatin: In a stand mixer bowl, combine 1/2 cup cold water and gelatin. Let sit for 10 minutes.

  • Prepare Sugar Syrup: In a saucepan, mix 2 cups sugar, 1/2 cup cold water, and 1/4 tsp salt. Heat on medium-high, stirring until dissolved. Clip on a candy thermometer and boil until it reaches 240°F.

  • Whip Gelatin Mixture: Slowly pour hot syrup into bloomed gelatin while mixer runs on low. Increase to high and whip 10–15 minutes until thick and glossy.

  • Add Flavoring: Mix in vanilla or chosen extract and optional food coloring.

  • Pour and Set: Dust a 9×13 pan with powdered sugar/cornstarch mix. Pour marshmallow in, smooth top, dust again. Let set uncovered 6 hours or overnight.

 

  • Cut and Store: Flip onto powdered surface, cut into squares, dust all sides, and store in an airtight container.

Notes

  • For vegan marshmallows, substitute agar-agar for gelatin.
  • Use honey or maple syrup for a natural sweetener version.
  • Add cocoa, fruit powder, or extracts for fun variations.
  • Store up to 3 weeks in an airtight container or freeze for longer shelf life.
