For the Honeybun Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk or cream
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- Make crust: Mix graham crumbs, brown sugar, cinnamon, and melted butter. Press into the pan and bake 10 mins. Cool.
- Make swirl: Mix brown sugar, cinnamon, and butter until smooth. Set aside.
- Make filling: Beat cream cheese until smooth. Add sugar, then sour cream and vanilla. Mix in eggs one at a time, gently.
- Assemble: Pour half the filling over crust. Drop spoonfuls of swirl, swirl gently. Repeat.
- Water bath: Wrap pan in foil. Place in roasting pan, fill with hot water halfway up sides.
- Bake 55–65 mins. Center should jiggle slightly. Turn off oven, crack door, rest 1 hour.
- Cool and glaze: Bring cheesecake to room temp, then chill 4 hours or overnight. Drizzle glaze before serving.
- Serve: Slice with a warm knife for clean cuts. Optional: top with whipped cream or toasted pecans.
