Description

Swirled with cinnamon sugar and topped with a honeybun glaze, this cheesecake is the perfect marriage of cozy pastries and creamy indulgence.

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, melted

For the Cinnamon Swirl:

  • ½ cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 3 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8-ounce) packages cream cheese, room temperature
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 1 tablespoon vanilla extract
  • 3 large eggs, room temperature

For the Honeybun Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Make crust: Mix graham crumbs, brown sugar, cinnamon, and melted butter. Press into the pan and bake 10 mins. Cool.
  • Make swirl: Mix brown sugar, cinnamon, and butter until smooth. Set aside.
  • Make filling: Beat cream cheese until smooth. Add sugar, then sour cream and vanilla. Mix in eggs one at a time, gently.
  • Assemble: Pour half the filling over crust. Drop spoonfuls of swirl, swirl gently. Repeat.
  • Water bath: Wrap pan in foil. Place in roasting pan, fill with hot water halfway up sides.
  • Bake 55–65 mins. Center should jiggle slightly. Turn off oven, crack door, rest 1 hour.
  • Cool and glaze: Bring cheesecake to room temp, then chill 4 hours or overnight. Drizzle glaze before serving.
  • Serve: Slice with a warm knife for clean cuts. Optional: top with whipped cream or toasted pecans.
