Description

Moist, buttery cinnamon donut bread with a crackly sugar crust—your favorite donut in sliceable loaf form.

Base Ingredients:

  • 1 ¾ cups all-purpose flour, spooned and leveled
  • ¾ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt

Wet Ingredients:

  • ¾ cup buttermilk, room temperature
  • ⅓ cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 ½ teaspoons vanilla extract
  • ¼ cup plain Greek yogurt

Cinnamon Sugar Topping:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, melted

Optional Add-Ins:

  • ½ teaspoon ground nutmeg
  • ¼ cup chopped toasted pecans or walnuts
  • Swirl: 2 tbsp brown sugar + ½ tsp cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  • Mix dry ingredients in a large bowl: flour, sugar, cinnamon, baking powder, baking soda, and salt.
  • Whisk wet ingredients in a medium bowl: buttermilk, melted butter, eggs, vanilla, and Greek yogurt.
  • Combine wet and dry ingredients. Fold gently with a spatula until just mixed. Do not overmix.
  • Optional swirl: Layer a mix of 2 tbsp brown sugar and ½ tsp cinnamon in the middle of the batter.
  • Pour batter into the prepared pan and smooth the top.
  • Top with butter and cinnamon sugar: Brush melted butter on top and sprinkle with cinnamon sugar mix.
  • Bake for 48–55 minutes, until a toothpick comes out clean or with a few crumbs.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool for at least 30 minutes before slicing.

Notes

  • Substitute sour cream for Greek yogurt.
  • Make it dairy-free with almond milk + vinegar and coconut oil.
  • Gluten-free? Use 1:1 GF flour with xanthan gum.
  • Freezes beautifully for up to 3 months.
