Instructions
-
Marinate Shrimp: Toss shrimp with Cajun seasoning, paprika, and a pinch of salt. Let sit while prepping other ingredients.
-
Boil Pasta: Cook fettuccine in salted water until al dente. Reserve ½ cup pasta water before draining.
-
Sauté Shrimp: Heat olive oil and butter in a skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink and slightly charred. Remove and set aside.
-
Make Sauce: In the same skillet, reduce heat to medium. Add butter, garlic, and sauté until fragrant. Pour in chicken broth and cream, then stir in Parmesan, onion powder, and more Cajun seasoning. Simmer until smooth.
-
Combine Everything: Add pasta to the sauce, toss to coat. Fold in shrimp and any optional veggies or sausage. Adjust consistency with reserved pasta water.
-
Serve: Plate in shallow bowls, garnish with parsley and extra Parmesan. Serve hot with lemon wedges if desired.
Notes
- Use freshly grated Parmesan for a smoother sauce.
- To lower the spice, reduce Cajun seasoning or omit cayenne.
- Stir in pasta water to loosen sauce if it thickens too much.
