  • 1 lb ground beef (or ground turkey)
  • 1 packet onion soup mix (e.g., Lipton)
  • 1 (14.5 oz) can diced tomatoes (undrained)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1/2 cup small pasta shapes (elbow macaroni or ditalini)
  • 6 cups beef broth (or chicken broth)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Optional Add-ins:

  • 1 cup diced potatoes
  • A handful of fresh spinach
  • 1/4 tsp red pepper flakes

Instructions

  • Heat a large soup pot over medium-high. Add ground beef and cook until browned, about 5–7 minutes.
  • Drain any excess fat from the pot.
  • Stir in onion soup mix, garlic powder, and Italian seasoning. Cook 1 minute.
  • Pour in beef broth and diced tomatoes with juice. Stir to combine.
  • Add frozen mixed vegetables. Bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 15–20 minutes.
  • Stir in pasta and simmer uncovered for 8–10 minutes, or until pasta is tender.
  • Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
  • Serve hot, garnished with fresh herbs or grated Parmesan if desired.

  • Use plant-based crumbles and vegetable broth for a vegetarian version.
