- 1 packet onion soup mix (e.g., Lipton)
- 1 (14.5 oz) can diced tomatoes (undrained)
- 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
- 1/2 cup small pasta shapes (elbow macaroni or ditalini)
- 6 cups beef broth (or chicken broth)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Optional Add-ins:
- 1 cup diced potatoes
- A handful of fresh spinach
- 1/4 tsp red pepper flakes
Instructions
- Heat a large soup pot over medium-high. Add ground beef and cook until browned, about 5–7 minutes.
- Drain any excess fat from the pot.
- Stir in onion soup mix, garlic powder, and Italian seasoning. Cook 1 minute.
- Pour in beef broth and diced tomatoes with juice. Stir to combine.
- Add frozen mixed vegetables. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 15–20 minutes.
- Stir in pasta and simmer uncovered for 8–10 minutes, or until pasta is tender.
- Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
- Serve hot, garnished with fresh herbs or grated Parmesan if desired.
